Jerusalem Artichokes

Preparation & Storage - Will store well for several weeks in a cool, dry place. Scrub well before use. The skins are edible once cleaned. If peeling keep in lemon juice and water to prevent discoloration.

Delicious in casseroles, soups or mashed with other root vegetables. Roast or bake.

Stir fried Jerusalem Artichokes (serves 6)
  • 2 tbsp olive oil· 350g Artichokes - scrubbed & cut into pieces
  • 1 small onion - finely chopped
  • 1 garlic clove - crushed
  • ½ tin tomatoes or 4 tomatoes skinned & chopped
  • 1 tbsp tomato purée
