Granola

This malted, toasted breakfast cereal is delicious with cow's or dairy-free milk or yoghurt. Also excellent sprinkled on ice cream.
  • 100ml sunflower or soya oil
  • 100ml malt extract or honey
  • 2 tbsp water
  • 500g mixed cereal flakes (eg porridge oats, jumbo oats, rye flakes, wheat flakes, millet flakes, quinoa flakes)
  • 75g sunflower seeds
  • 50g sesame seeds
  • 50g pumpkin seeds
  • 25g desiccated coconut
  • 150 chopped nuts (eg almonds, hazelnuts, brazils, cashews)
  • 100g sultanas, raisins or chopped apricots
1. Heat the oven to Gas 2, 1500C, 3000F.
2. Gently melt the oil and malt or honey in a pan with 2 tbsp water.
3. Mix all the dry ingredients except the dried fruit.
4. Add the oil and malt and mix thoroughly.
5. Spread on large trays and bake for about 45 minutes until lightly golden, stirring frequently.
6. Cool. Add dried fruit and store in an air-tight container.
