Beetroot

8oz raw beetroot - grated 2 sticks celery - chopped 1 orange - grated rind and juice 2oz raisins 2 tbsp finely chopped chives or spring onions Dressing orange juice 1 tbsp sunflower oil 1 tsp sesame oil 1 clove garlic - crushed Garnish sesame seeds 1. Soak the raisins in the orange juice for a few hours. 2. Combine the beetroot, celery and drained raisins with the orange rind and the chives. 3. Combine the dressing ingredients and toss into the salad. 4. Scatter with chives and sesame seeds and chill until needed.

Annette's Beetroot

1. Cut the beetroot into small chunks.
2. Add extra virgin olive oil, crushed garlic, chopped basil, salt & black pepper.
3. Put in a foil parcel, seal the top and leave an air space.
4. Bake in a hot oven for about 45 minutes.
