Breakfast Bananas

  • Mix chopped dried apricots into a portion of natural yoghurt - cover and leave overnight in the fridge.
  • In the morning add sliced banana and gently stir into the yoghurt.
  • Sprinkle with lightly toasted desiccated or flaked coconut and serve.
Baked Bananas (serves 6)
  • 6 bananas - peeled
  • 75g butter/margarine
  • 1 tbsp honey
  • 1tsp mixed spice
1. Preheat the oven to 180C/Gas 4
2. Gently melt the honey and butter in a heavy based pan and add the mixed spice.
3. Coat the bananas in the mixture and place in a greased baking dish.
4. Bake for 20 minutes or until soft.
5. Serve with ice cream or yoghurt.
