| Beetroot
Use the tops as spinach, the small leaves can be refreshed in cold water and used in salad. Do not remove all the stalk or root, cook the beetroot whole in a steamer or bake in a slow oven. Cool, peel, dice and mix with any of the following: apple, orange, dill, walnuts and dress with soured cream or a French dressing.
